[food] vegetarian italian sausage patties with cornmeal mush

I have a new favorite TV show: More Fast Food My Way starring Jacques Pépin.

In his Episode 223: Dessert First! he makes italian sausage patties served over cornmeal mush. It’s basically a combination of italian sausage without the casing, mushrooms, day old bread, green onions and some spices that are basically kneaded together and then shaped into patties.

The patties are then cooked in some olive oil until they are nice an brown. The pan is then deglazed with some white wine and once the alcohol has burned off, the pan is covered for a couple of minutes to finish cooking.

Once done the patties are served over some fairly soft cornmeal porridge.

Well since I’m a vegetarian, I don’t do sausage but was intrigued by the simplicity of the dish and decided to give it a shot without the sausage.

A (non-vegetarian) friend of mine had experimented with some ways to cut some meat out of his diet and suggested I might try Gimme Lean Sausage.

Well, to make a long story short, that product really rocks. I just use a full package of it to substitute for the meat and add a couple more herbs and spices (oregano, basil and Worcestershire sauce) and Voilá! I have a very tasty meal.

I’ve now made it 4 times and it just keeps getting better. My kids even like the corn meal mush if it has some flavor to it. A little garlic, butter and some salt go a long way on that.
