Yeah, vegetarian sausage will likely sound odd to a lot of people, but it’s out there and as a vegetarian it’s a nice option. There are a few pre-made options, but many of them are just notvery good. The best ones out there were made by Boca, but after they were acquired by Kraft, they disappeared from store shelves. That’s what spawned my interest in making my own.
To make a long story short, I came across a recipe for Spicy Italian Vegetarian Sausage on Every Day Dish. They are pretty easy to make and turned out awesome. The recipe suggests that you should go with Bob’s Red Mill Vital Wheat Gluten, which I’ve normally used. This time I tried some wheat gluten from the bulk bin at Whole Foods, and I don’t think it’s quite the same. None the less, the texture was awesome and the flavor was not far off.
Definitively worth trying.
